Here is my super easy recipe for dairy free, wheat free, sugar free protein pancakes (serves 2 people… or one very hungry breastfeeding mama!)
- 1 medium sized banana
- 1-2 heaping scoops of whey protein (preferably with no artificial sweeteners!)
- 4 egg whites
- 1/3 cup oats
- 2 tbsps unsweetened vanilla almond milk
- 1/4 teaspoon baking powder
- 1 teaspoon cinnamon
Blend all ingredients in a food processor until smooth — pour batter one scoop at a time (smaller scoops for “crêpe-like” pancakes, as pictured above) in a sprayed pan. 2 minutes per side on medium heat. Serve with maple syrup… preferably without any high fructose corn syrup (read this article on why HFCS will kill you.)
